CHRISTMAS EVE SHRIMP SCAMPI

If your home is like ours on Christmas Eve, you are very busy preparing seven or eight different kinds of fish dinners.  There can be a problem with those who do not particularly like to eat the anchovies, calamari, clams, scungelli, codfish, eels or filet of sole.  So what is the best to feed those who have not yet acquired a taste for such delicious fish … in our family it is Shrimp Scampi.  In this dish the shrimp is all cleaned up for you and you just have to open your hungry jaws and gently place the shrimp in your watering anxious mouth,  Hmmm.

 

I actually received this recipe from Wheatly Hills Tavern.  Unfortunately, they are no longer in business, but I was very happy to get this recipe from the Zaino family.  They were noted for this recipe in their Tavern.  Give it a try.  It is simple to make and so delicious.  Hope you enjoy it.  Everyone in our home does.

 

4 pounds shrimp, cleaned

1 pound butter

2 cloves garlic, minced

¼ teaspoon oregano

¼ teaspoon thyme

½ teaspoon red crushed pepper

¾ cup marinara sauce  

¼ cup sherry wine

 

Melt butter in pan slowly until it bubbles; add garlic and shrimp.  Reduce heat and simmer 2 minutes; add all the herbs.  Cook until shrimp is pink.  Add marinara sauce and sherry.  Simmer until it bubbles.  Serve immediately.

This recipe can be poured on top of spaghetti
