
ITALIAN CHEESE CAKE
- 2 lbs. ricotta cheese
- 12 large eggs
- 1 bottle orange extract
- 1 bottle lemon extract
- 1-1/2 cups sugar
- 1 pint heavy cream
- dash of anise extract to taste
Mix ricotta cheese, eggs, sugar, heavy cream and extracts all together with hand mixer in a large bowl. Pour into spring form pan (do not grease). Bake in pre-heated 350° oven for 1 hour. Turn off and let stand in oven 1 hour or until top browns. Refrigerate. Serve plain or dust with confectioner’s sugar.
