If you haven’t made your traditional Strufoli yet … there is still time before Christmas Eve. Here is a recipe from Nettie Innella, a long time member of the John Michael Marino Lodge #1389 in Port Washington. This recipe and others can be found in our first published cookbook – “Cucina Classica … Maintaining a Tradition”.
Strufoli (Honey Balls)
2 pounds flour
10 eggs
1 stick melted butter
2 teaspoons vanilla
2 teaspoons baking powder
1 large jar of honey
candy sprinkles
In a large bowl, beat eggs, add vanilla and butter. Place flour into another large bowl and add egg mixture. Knead dough (requires someone with strong hands) and let set in covered bowl for 10 minutes. Repeat this step twice. When dough is ready, cut into small pieces. Roll dough into strips and cut into ½” pieces. Deep fry dough pieces (do not crowd) – drain and then sprinkle with warm honey and candy sprinkles.
Cover with waxed paper and store in a cool place. They will stay crisp for several days, if they last that long!
